Who We Are
In 2020, Aaron Waldman founded TWIYO as one-man operation, driving Maine oysters down to New York and distributing them with his Northeast Oyster CSA. Since then it has grown to include a catering business and a full-fledged oyster farm using a solar-powered tumbling system designed by our farm director, Luke. These rafts house oysters vertically in the water column, which means we can grow more oysters using less space on the water surface (Learn more about our 3D-COAST). Since building our shellfish shipping and dealer location in 2025, we are able to distribute our Stone Fruit oysters to restaurants, wholesalers, and individuals.

Thanks to many grants and valuable resources from the Maine aquaculture community, our farm has been able to vertically integrate our shellfish production from farm to table. At the end of the day, our goal is to share quality, sustainably produced oysters with our community, using creative techniques that we are constantly improving upon.
