Community. Quality. Sustainability.

We founded The World Is Your Oyster in the heart of the pandemic to create sales opportunities for small oyster farms by connecting them with oyster lovers in NYC. Bringing communities together to support sustainable aquaculture is the only way to ensure that Atlantic seafood will be available for future generations: This was the guiding principle behind the Northeast Oyster CSA, our flagship oyster delivery system featured in the The New York Times and Time Out Magazine.

In 2023 we began focusing on developing a solar-powered oyster growing system on our own farm in Wiscasset, Maine. The rafts we’ve fabricated feature automated, solar-powered tumbling, and maximize growth density per surface area by housing oysters vertically in the water column. Learn more about 3D-COAST.

  • Aaron Waldman

    FOUNDER

    The World’s Your Oyster began in 2020 with one former-musician driving a used Ford Transit Connect named Van-essa with a homemade refrigeration unit packed full of shellfish from Maine to NYC. He handles admin and wholesale, and makes frequent appearances on our events team.

  • Kyle Crew

    EVENTS COORDINATOR

    Kyle and Aaron met at The Mercury Lounge in 2018. In addition to their musical background, the two shared decades of hospitality experience. Under Kyle’s guidance, our events team has become the go-to raw bar caterers for The William Vale Hotel, taken on roaming shucker events at the Belle Haven Club, and provided oysters for everything from weddings to film screenings.

  • Luke Saindon

    FARM DIRECTOR

    Luke met Aaron at the University of Maine in 2012. After graduating, he spent over a decade working with several aerospace startups, and launched a lot of things really high into (and beyond) the air. Luke’s engineering background and dedication to sustainable practices shine through in the solar powered oyster growing sytem he designed and built in 2023 with the aid of grants from Focus Maine and the Maine Technology Institute.

  • Nina Boutin

    AQUACULTURE TECHNICIAN

    Now an oyster enthusiast since joining TWIYO in 2023, Nina has a background in grape growing, winemaking, and sheep farming. She’s passionate about fiber arts, especially spinning wool. With a humanities degree and years of eclectic hands-on farming experience, she has become an essential part of day-to-day operations, keeping the farm running smoothly.

  • Esther Ahn

    AQUACULTURE TECHNICIAN

    Esther spent over 15 years as a hairstylist in the film industry before trading city life for oyster farming and sheep keeping on the Maine coast. An avid fiber enthusiast and oyster connoisseur, she’s involved in all aspects of farm operations both on and off the raft.
