We're happy to offer live, in-shell bay scallops harvested off Marth's Vineyard for NYE! Bay scallops are the sweetest on the market, and have an unmatched unctuousness to them.

Marco prefers to eat just the adductor muscle (the meat of the scallop), while Aaron prefers to eat these whole, without cleaning them, with the orange roe and stomach for added texture. The entire scallop is safe to eat, so it is up to you how thoroughly you'd like to clean these. Thankfully for the squeamish (Marco included), these are very easy to clean.

To clean the scallop, insert your oyster or clam knife into any opening on the lip of the shell, and swipe through it to the hinge of the scallop, with your knife arched upwards, as close to the top of the shell as possible. Once this is done, the shell should easily open. Then, simply cut along the bottom shell to release the scallop, and, if you'd like to, scrape out the stomach and roe. Once you familiarize yourself with their anatomy, you can also clean these with a spoon, as in this video.

We thoroughly recommend saving at least a few of these scallops to eat raw, either sliced thin as sashimi with soy sauce, or as carpaccio with olive oil, flaky salt, and lemon juice. They're also delicious steamed in the shell, or sautéed in parsley and garlic, then finished with lemon juice. We recommend taking care not to overcook these guys (as they may get chewy): they should only need 2 minutes in the pan.
